Excerpt from Wheat Flour: Its Weight and Moisture ContentFor a number of years the writer of this article took part in the cooperative testing of methods of the A. O. A. C. And has served in various capacities in the organization, and for some years past has been engaged in the manufacture of Hour. A part of the data in this article was presented in a brief prepared by request of the Eu reau of Chemistry, U. S. Department of Agriculture, in June, 1922 and this more extended report is now made by request of the Millers National Federation. In each case the report has been made with out compensation. The brief and this more extended report have been prepared in the hope that by bringing together certain phases of the question, some solution of this much vexed problem may be suggested.
