Excerpt from Mechanical Sizing of Celery Stalks by Weight: Marketing Research Report No. 822The sizing method presently used is hand-sizing by the packer on the mule train. Celery sizes usu ally packed are referred to as 2, 3, 4, 6, or 8. These sizes designate the number of dozens of stalks packed in each crate.Each packer on the mule train is assigned re sponsibility for packing only one size. The pack ers are responsible for selecting the proper size, breaking undesirable petioles from the stalk, and packing the correct number of stalks in each crate.Accepted criteria for a good celery pack are that it have stalks of fairly uniform size, the proper count per crate, and a slightly bulged lid.
