A_ mean content of 7 66 per cent of free citric acid is yielded by the results of analysis of 42 samples of the present collection, which a pear to be genuine, except that some me contain small amounts _of added water. T would thus seem justifiable to establ at least 7_ 5 per cent of free citric acid as a normal amount for lime juice. When the article contains decided] less than this amount, it is reasonable to infer the addition of water and as the num r 7 5 per cent has been deduced from a list of 42 samples.
