Excerpt from Food Animals and Meat Consumption in the United StatesThe estimates are made by adjustment of the census figures to a January 1 basis and to include all ages and all animals in towns, villages, and ranges as well as on farms. The estimates of the department have been used to obtain the ¿uctuations between census years. A method is used by means of which the ratio of the estimates in successive years for 10 years after each census is multiplied by a constant factor so as to make the tenth year agree with the next census. The estimates for dairy cattle have been obtained from those for milk cows by multiplying by - ratio of total dairy cattle to milk cows 2 years old and over in the census of 1920 - this being the first census in which dairy cattle of all ages were separated from beef cattle.In Table 1 the separation of cattle into dairy cattle and beef cattle is only an approximate one. The table does not indicate strictly the respective numbers of cattle of dairy-breed types or of beef-breed types. For the years prior to 1920 the separation is based largely on the classification shown by the 1920 census. Since the 1925 census indicated a considerable variation from that of 1920 a different method has been used for making the classification for 1920 and thereafter. The new basis of estimating the number of dairy cattle is the depart ment's annual estimates of cows and heifers 2 years old and over, kept for milk. To this number is added an estimated number of yearling heifers, calves, and bulls (determined by comparison of cen sus figures) to get a total of dairy cattle on farms, and to this is added an estimate of dairy cattle not on farms. This total of all dairy cattle is subtracted from the estimate of all cattle, and the difference is called beef cattle. It should be noted, however, that the depart ment's estimates of cows and heifers 2 years old and over, kept for milk, includes about 20 per cent of beef-type cows, and a somewhat similar percentage of heifers and heifer calves included in the dairy cattle estimate would be of the same type.About the PublisherForgotten Books publishes hundreds of thousands of rare and classic books.
